What I did, e.g., I have assigned one of my hardware mixer fader permanently to "Track: Set volume for selected tracks (MIDI CC/OSC only)" which controls the volume of any selected track. Later, I would just need to define whether I want touch, read, write etc. However, I have seen somewhere in the Preferences that you can also keep one of these as default behaviour.
Just for interest, I have my midi control faders permanently assigned to CC1, 7, 11 and 64 that would control all these parameters in any DAW including Reaper. Moreover, I sometimes use JS MIDI CC MAPPER to control as many parameters as I want with only one controller, say mod wheel.
