A/B tracks, multiple alternative tracks

Assuming I have several alternate (parallel) takes of a given track, how would I quickly switch between them (having only one of them playing at one time)?

Can this be done for a group (folder) of tracks? (have only one folder active, and activating another deactivates the previous one)

Yes.
Select the ones you want to A/B, Shift+G groups them, from there on it's rather self-explanatory (look at the grouping matrix) and the manual does a good job explaining this.
