If you need fine grain control of your click then you should be using a click track not the built in metronome. This is not a limitation of the software but a feature that makes you a better producer. You really want to be fumbling with settings all day while the people who are paying you good money are staring at you wishing they had a faster engineer? Or would you rather just grab a cowbell VSTi and draw it out in midi? Then you have your click right there to see in the arrangement view. BTW all the metronome settings and explanations can be found on page 59 of the manual. I suggest you RTFM.

You can change the grid on the fly. In the Actions menu search for "grid adjust". To get triplet grid toggling, install SWS and in the Actions menu search for "Toggle triplet".
