Yes. You need to get pitch as an envelope parameter and change it at the piece of audio you want to "bend"

Section 16.28, item/take envelopes, in the manual, I'll help further when I'm in front of REAPER and have more time later on if you're still stuck

Is there a way to edit all the simultaneous take envelopes in different tracks grouped together? (For example, I want to put a volume envelope on three tracks that each carry one mic of a recorded instrument, and edit them together.)

Couldn't you route all three to another track, and mess with the volume there?

You could also group elements, like mute or solo buttons or - in your case - track faders. If you don't want to, you don't necessarily have to build folders for that.

Go to "View -> Grouping Matrix"

It eg. is possible, to define one of the faders as master, the others as slaves or have them all on the same priority level.

Yes, but sometimes the audio clip envelope might just be much more convenient.
