Default Any advice on recording multiple parts for acoustic guitar composition?

I have a pair of condender mics ( they're actually intended for live vocals) and a Zoom H4.

I want to record some flatpicking (Scottish/Irish) trad tunes, and also record some backing on the same guitar and with the same mics.

I've read a fair bit about mic positioning and techniques, but I'm wondering what would be the best overall approach, particularly regarding stereo and an overall plan.

Would it be better to record the main "tune" part with just one mic, and have it in the centre of the mix?
Or stereo?

I'm tempted to record the main part in stereo, but then how would I go about fitting the backing in?

I'm trying to think ahead so I don't have to be trying to fix things too much by mixing.

Any advice appreciated.

(I'm also about to record some fiddle and guitar, so I'll have a similar problem there of having to fit a main instrument and make it sound as full as possible, with guitar backing.)
