I think it's better to just send the live mixed stream to the server and record all the single channels offline at the same time. (Easy exercise with JACK)
Later, you could just remaster the whole jam, if you wanted.
There is no need to send the individual channels up to the server if the other users don#t want to do *their live mix/edit* of your channels.

About PortAudio: Right, better concentrate on the PortAudio backend and see if it is good enough already.
