So ReaVerbate(mostly) and ReaVerb with a few IRs work fine for me. If I was recording acoustic piano or string quartets or acoustic folk I would probably prefer something very different.

Yep, and even in the same piece of music I might have a set of acoustic instruments sharing a room IR, but then have a synth with it's own digital-sounding reverb.
It's all about the space you want the parts to inhabit.
