My experience is exactly opposite: more cores = more plugins and better realtime performance. At least, that is so in projects which have 50-100+ virtual instrument instances, at high realtime quality settings.
So far, a 8C/16T Ryzen has been the first "cheap" CPU I'm not at risk of often maxing out. Haven't tried one in a Hackintosh yet, though.
