'Normal' is the default (whatever it means) when the the project settings dialog comes up, but once chosen something else there's no going back to 'Nomal', because there isn't an entry with 'Normal' in the dropdown.

yes, it is a bit (very) confusing,but
you can revert to "Normal" if you just select the selected option again - think of it as a toggle.

e.g. you select "Mid/Side" so it is checked and active, now select it again to un-select it and you are back to "Normal".

I think I've never encountered a dropdown menu acting as a toggle before in my decades of using computers, but ok.
