Ironically, it roughly looks like the setup I started with. My laptop was a 12.5" Thinkpad X220, but my MIDI controller was a much tinier thing than yours and I found it exhausting to work on the small screen (some plugins did not fit wholly on it). I'm only patient with people. With computers I'm very short-fused, so slow workflows drive me nuts
I HAD to slow down. I was getting stiff.
My arm is almost perfect now.
I deal with 6 or 7 tracks max.
Good times!
EDIT: now it's more like 8 or 9, because I render the kick, snare and hat on separate tracks.
But I used to have all the drums in on stereo track in my other records.

Update 20:
Printing synths and FX ASAP is the best.
I can lose cool chains and not freak out about it.
It's good, actually.
I process my synth (a lot) and print it.
Then I delete the source track.
For ever.
