Default macOS clang vs (not-clang) builds

Hey, just getting started with the prereleases. I see that there are two 64-bit Intel (x86_64) builds for macOS, one is marked 'clang' and one isn't marked. In 2021 on macOS, I'd expect that the clang build is the one to go for, but please let me know what the difference is? Thanks!

The clang-compiled build may have better compiler optimization, but it’s not notarized, so you have to do an extra step to install it. In practice it probably doesn’t matter which one you use.

Justin says: "the ICC builds end up as the 64-bit builds, the clang builds end up released as the notarized 10.15+ build. which is faster, it depends? on older macs the ICC build is probably faster, newer macs might not matter so much."

How old are we talking? 2013 macPro? Is that old now?

Also, with clang I can't use CMD+C or V to copy/paste in the save dialogue box. Not sure what that's about.
