I'd like to be able to head out to the coffee shop with my laptop in the morning to use Reaper on my laptop, not to record but to do some processing, granular synth and things on soundclips that I've imported from my Desktop.
I would like to use the Laptop just by itself with headphones without the Scarlett interface. So far I've only used both the laptop and desktop with the interface and have not tried to configure my laptop or Reaper to use without the interface.
I was hoping someone could clue me in on how to configure things to do this.
Can this be all done in Reaper preferences?

Just select the built in audio interface integrated in your laptops logic board.
Further if this is for example, a situation where you have a project recorded and running at 96k with your normal audio interface but your laptop is older and only supports a max of 48k, Reaper lets you do this. You can run the project at a different sample rate on a different system as needed. When you put it back on the main system, nothing has been altered or reduced.

You do realise that using Reaper anywhere hear that dishwater Starbux passes off as coffee will probably introduce tuning dissonances and (especially if you take sugar) melt your keyboard?
I don't like supporting the likes of Starbucks either. But they do have medical grade coffee. When you're on the road and don't have time to search around you will at least get actual medical grade coffee there if you need that. The coffee-water most gas stations and restaurants serve should be banned! Or at least carry a disclaimer that it's not the real thing.

Medical Grade as in "tastes like it has been made with Listerine"?
Only high street coffee I like even less is Costa. Yuk!
I have been doing what you describe for years, since I first started using REAPER. I have a keyboard shortcut that opens the Audio Device settings page so I can change it quickly. Every time I see a thread asking for improvement suggestions, I suggest an action to allow toggling between audio devices.
(Not for moving from recording room to Starbucks, but moving from recording room to easy chair!)

I was going to smartass make a little fun at this, but OP seems genuine and moreover I can only approve of granular mangling and reaper at the same time.
I'd maybe suggest at least trying just sitting, sipping and staring into space at Starbucks, letting your mind come up with ideas and avenues of exploration - then going home and doing proper crazy music shit.
often feel I literally work on tunes as I have a coffee, brain does it's thing then I go and execute later.
Another way to get audio out of your laptop if the 3.5mm jack is noisy, like mine is, is to get a USB soundcard in a dongle.
the one on my macbook is sometimes noisy if I'm charging it at the same time in a place with dirty power (my public library). Sometimes I'll use my zoom recorder as an interface

Actually, I usually go to a Nero's coffee shop right up the street from my house. I use Starbucks as more of a generic term for "a place to sit, suck down coffee and and frock around the internet. The drummer in my band hates, hates, Starbucks, says their coffee reminds him of "A dirty, damp industrial building". I get it.
I have a little project I'm doing for fun where 70% of it is taking selected portions of layered guitar beds and making scapes and drones to put behind it. Really getting a kick out of it, loving the sounds. So, its not as much the core work but just preparing some rich and unique drapes of sound clouds. And the Mangle is just perfect for that. So, show up at the local coffee shop with the laptop, headphones and some imported clips, OD on caffeine and Mangle away. Plus, its getting away from the cats for a couple of hours and getting my nostrils back. It would be a win win situation.

Setting the audio device driver to WASAPI works well for me. I can input music with a small USB keyboard without much latency. I just use the built-in audio and headphones. In a motel room I will use a bluetooth speaker.
Download “asio4all”. It’s an ASIO driver for generic onboard sound cards. You will get better performance out of your soundcars than with the stock driver.

Extremely unlikely. ASIO4All is a wrapper that fools programs into thinking the regular wave driver is ASIO. It aint.
Sometimes if your hardware interface is very old or has badly written drivers you might see an improvement with ASIO4ALL but as a rule of thumb, leave it severely alone.
As for using it with the onboard soundcard, you could well be right that in some cases it actually works, because most onboard sound cards are not designed to be used for multiple I/O, etc.

Just letting it sit for a couple minutes is enough to let the grounds settle and just pour with no filter.
My father - late MD / PhD - grew up as a poor farmer's son in Ecru, Mississippi. "Mississippi Mud" was the only way they had to make coffee. No filters back then. Tupelo Mississippi is 15 miles away. The vibe!! Strong Coffee. Rich earth. Dynamite blues.

Funny, I'm not a coffee snob. I of course like good coffee, but I don't get riled up over gas station coffee or Starbucks. Starbucks is OK, it's just not that great if you consider people think it's "good" coffee, it's overpriced generic OK coffee.
Of course everyone talking about farmers, miners coffee, or Mississippi mud as you're calling it, it's essentially the same as a French press, and yeah that method is strong.
Oh, and all of you are drinking it black I'm assuming? At home I buy organic french or Italian/Espresso blends and haven't drank coffee with crap in it since I was a kid. <-- In that way I'm a snob, coffee with cream and sugar isn't coffee.
