Is it possible to edit the virtual MIDI keyboard to re-map the default keys to keys of your choice?

I'm not sure what you mean.

You can move up / down octaves - right-click the key you want to be in the centre of the keyboard.

yes you can. use the JS: Key re-mapping utility.

drag source key and destination to assign the new map and then set them the same to remove the map.
