Can I choose to send audio to a Bus at a "certain point" in the FX chain ?
I know you can send to a Bus pre-FX or post-FX, but can I send to a Bus just after its been through Nectar 3 and before it gets to Gullfoss ? (see image below)

not really, but there is a workaround.
disable the master/parent send on this track.
send to two new tracks, one containing the gulfoss and nectar plugins, one containing the other stuff you're planning to do.

Not directly, but yes.
1. Add a plugin after Nectar that won't do anything to the signal. I use JS: Volume for stuff like this.
1.5. Right-click the new plugin and rename it in that chain so you remember why it's there.
2. Open the plugin's I/O pins (top-right of the FX window).
3. Use the + button to add two channels to the track.
4. Add pins from channels 1 + 2 on the plugin to 3 + 4 on the output (if your track already has multiple channels you'll need to use 5 + 6, etc). The output pins should look like:

X 1
X 2
X 3
X 4
5. Create a send to the bus track.
6. In either track's Routing window, set the bus to take its signal from 3 + 4 (or whatever pair you used) on the sending track.

You could actually just set Nectar’s output pins instead of adding a whole extra plugin.

easiest way is to put a JS gmem send plugin between Nectar & Gullfoss and a corresponding gmem receive plugin on the bus, i think

You could also use embedded folder tracks. Place the track inside a folder track. Move the latter FX to the folder track and send from the child. No pin reassignments required this way.
Or, you could move your first FX onto the item, as item FX, then send prefader/pre-FX.
Or, you could freeze the track after the first FX, then send prefader/pre-FX.
