The project settings can save things changed outside of that dialogue, e.g. the grid size. I know this is not intuitive.
But the fact that this is possible is why I repeatedly referred and still refer to the envelope and automation settings in the options menu, which you tenaciously ignore.

OK I got it now ! I think at first when you mentioned Options menu, I confused it with Preferences for some reason, so I was looking for the setting in there and wondering why I wasn't seeing it. But yes, now I do see the setting in the Options menu, I changed it and then saved as project defaults. I wasn't aware that saving project options would save things outside that dialog, but now you have so kindly explained it, I fully understand.
I did have a problem a while ago, where if I recorded volume in real time then played it back, the volume would gradually get quieter and quieter until the end of the track. I still don't know what was causing that, and it doesn't seem to happen any longer, but it may have been while searching for a way to stop it, that I accidentally set the option in question. Up to now, I have only been recording volume changes like that, but I decided I should learn how to change things not in real time, which is the point when I noticed I could not click on empty envelopes.
So thank you for your patience and for the clear explanation, which now makes complete sense to me.
